Lemon Buttered Stuffed Sole Roll Ups!
This lemon buttered Sole fish is a snap to prepare! It's affordable, healthy, quick and very tasty! Makes a great appetizer too!
For two people I use four slices of Sole. I usually buy about a pound and freeze the rest for later.
I lay the sole out on my Pampered Chef Stoneware Bar Pan. I absolutely love baking everything on their stoneware! I've used there stone cookware for over 28 years. This is a new one and I'm breaking it in nicely. It's already getting seasoned up pretty quickly!
Dab two slices of grass fed butter on each slice of fish, salt and pepper them. Add some lemon zest to each slice. Place a few pices of fresh spinach, Swiss Chard, or kale on each slice and roll them up.
Bake in a 400 degree oven for about 12 minutes
