Every holiday my mom makes Sausage Balls. When I had to go on a Gluten Free diet it was hard having to give these up during the holidays! Now I make them Gluten Free when I visit! These gluten free sausage balls are also a quick breakfast on the go, or store in the fridge as a high-protein snack. They are quick and easy, and low in yeast! Further, chickpea flour is an excellent source of magnesium, as well as thiamine, and potassium. Makes Approximately 24:
Preheat oven to 350° F In a large bowl, combine flour and baking soda; incorporate sausage, flour and cheese. Form into walnut size balls and place on ungreased baking sheets. Bake for 10-20 minutes (depending on oven), until golden brown.
